Food Sensitivities

A serious food allergy is hard to miss. The symptoms are usually immediate and dramatic enough to get your attention. These may include swelling or itching of the mouth or throat, nausea and vomitting, itching and watering eyes, difficulty breathing. These allergies are sometimes serious and require immediate medical attention.

There are many people, though, that suffer from more subtle food sensitivities and don't even realize that the symptoms they experience may be related to something that they are eating. These symptoms may include eczema, headaches, mood swings, bloating, constipation, diarrhea, excessive sweating, fatigue, joint pains, sinusitis, a prolonged cough, dark rings below the eyes. In babies and toddlers it is common to see these dark circles below the eyes and / or red circles of eczema on the cheeks.

Many of these symptoms can be dealt with by taking medication, but this will only cover up the symptom without dealing with the underlying problem. This can be compared to having a red warning light flashing in your car. You can cover the light with a piece of tape so that it doesn’t bother you. Covering it up may hide the light, but you would probably rather find the reason that the light is flashing, and fix it. This may seem like a silly example, but this is what we are doing every day… covering up symptoms with medication without searching for a cause. I am NOT saying that you should suffer with your headache or eczema without treatment. I AM saying that having recurring headaches and eczema is not a normal part of life, and it is worth also searching for a cause.

If you or someone in your family has recurring symptoms it is worth looking further into what might be causing it. To have this kind of a reaction to a food that you are eating, it is most likely something that you are eating on a regular basis… in amounts that throw off the balance in your diet. Every body has a threshold of tolerance to different proteins from different foods. When you continually pass this threshold, your body will give you signs (sometimes subtle, sometimes not so subtle) and the threshold drops to an even lower level of tolerance. This is one of the many reasons why eating a varied diet is important. Are you eating something so often that you can’t imagine how you would live without it? Try eliminating it for two week and see how you feel. Then add it back in and see how your body reacts. The most common food sensitivity AND food allergy that I see in my practice is: Cow’s Milk Protein.

Κεχρί και Κουνουπίδι Πουρέ / Millet and Cauliflower Mash

Πολλοί άνθρωποι δεν γνωρίζουν ότι υπάρχουν πολλά σιτηρά, εκτός από το σιτάρι και το ρύζι, που μπορούν να προσθέσουν ποικιλία στη διατροφή της οικογένειας. Το κεχρί είναι εκ φύσεως χωρίς γλουτένη, έχει μια ήπια γεύση, και είναι ευκολότερο στην πέψη από πολλά άλλα σιτηρά. Είναι πλούσιο σε βιταμίνες B, ιδιαίτερα Νιασίνη, B6 και φυλλικό οξύ, ασβέστιο, σίδηρο, κάλιο, μαγνήσιο και ψευδάργυρο. Δεν τρώω το κεχρί μόνο του, αλλά αναμεμειγμένο με φρούτα είναι ένα πολύ νόστιμο πρωινό, ειδικά για βρέφη από την ηλικία 6 μηνών.

Αυτό το μήνα μοιράζομαι μαζί σας μια από τις αγαπημένες μου συνταγές, υποκατάστατο του πουρέ πατάτας (στο κοκκινιστό κτλ.). Αυτός ο πουρές είναι υψηλής περιεκτικότητας σε φυτικές ίνες και βιταμίνες... είναι 100% χωρίς γαλακτοκομικό, 100% χωρίς γλουτένη και νόστιμος. Είναι κατάλληλη συνταγή για βρέφη από την ηλικία των 6 μηνών.

Many people don’t realize that there are many grains, besides wheat and rice, which can add variety and nutrition to your family's diet. Millet is naturally gluten free, has a mild taste, and is easier on the digestive system than many other grains. It is rich in B vitamins, especially niacin, B6 and folic acid, calcium, iron, potassium, magnesium, and zinc. I don’t eat millet on its own, but as a porridge mixed with fruit in the morning it is a hit, especially for babies from 6 months old.

This month I am sharing one of my favorite substitutions for mashed potatoes. This mash is high in fiber and loaded with vitamins… it is also 100% dairy-free, 100% gluten free, and delicious. Suitable for babies from 6 months of age.

Preparation time: 5 minutes

Cooking time: 30 minutes

ποσότητα: 6 μερίδες

Servings: 6

συστατικά / ingredients:

1 φλιτζ. κεχρί

1 cup millet

2 ¼ φλιτζ. νερό

2 ¼ cups water

½ κ.γλ. θαλασσινό αλάτι

½ teaspoon sea salt

2 σκελίδες σκόρδου, ψιλοκομμένο

2 cloves garlic, sliced

1 μεσαίο κουνουπίδι, χωρίς τα κοτσάνια

1 medium head cauliflower, florets only

2 κ.σ. ξίδι μπαλσάμικο

2 tablespoon umeboshi vinegar or balsamic vinegar

4 κ.σ. ελαιόλαδο

4 tablespoons olive oil

αλάτι και πιπέρι (για τη γεύση)

Salt and pepper to taste

1 χούφτα ψιλοκομμένο μαϊντανό

Handful of chopped parsley

Οδηγίες / Instructions:

1. Πλένετε τους σπόρους του κεχριού.

1. Rinse the millet.

2. Μόλις πάρει μια βράση το νερό στην κατσαρόλα προσθέτετε τους σπόρους, το θαλασσινό αλάτι, το κουνουπίδι και το σκόρδο.

2. Bring water to a boil and add millet, sea salt, cauliflower and garlic.

3. Μειώνετε την θερμοκρασία και τα αφήνετε να σιγοβράσουν, καλυμμένα επί 20 λεπτά, έως ότου οι σπόροι μαγειρευτούν και απορροφηθεί το νερό.

3. Reduce heat to low and simmer covered for 20 minutes until grains are cooked and water is absorbed.

4. Σβήνετε την φωτιά και τα αφήνετε καλυμμένα για 5-10 λεπτά.

4. Turn the heat off and let sit, covered, for 5-10 minutes.

5. Προσθέτετε τα υπόλοιπα συστατικά και τα πολτοποιείτε στο μπλέντερ ή με οτιδήποτε χρησιμοποιείτε για να κάνετε πουρέ πατάτας.

5. Add other ingredients and mash with a potato masher or mix with a hand-blender or food processor.

6. Γαρνίρετε με ψιλοκομμένο μαϊντανό και είναι έτοιμο για σερβίρισμα.

6. Garnish with chopped parsley and serve.

Σημειώσεις: Για επιπλέον πλούσιο και νόστιμο πουρέ, ψήστε τις σκελίδες σκόρδου με λίγο ελαιόλαδο σε χαμηλή θερμοκρασία ενώ μαγειρεύονται οι σπόροι.

NOTE: For and extra rich and delicious mash, roast the garlic cloves in the oven, with a few drops of olive oil, on low heat while the millet is cooking.
